Calendula officinalis High percentage of double and semi double flowers on long, strong stems. Edible Flowers: Petals can be used fresh or dried in “flower confetti,” soups, soufflés, rice dishes, baked goods, salads and to garnish desserts. Flavor is tangy and slightly bitter. Remove the petals from the base before consuming as the base can be quite bitter. Calendula also has a long history as a medicinal herb as well and can be used as a tea for respiratory issues and as a oil for topical use to help with skin conditions and deep tissue injuries. We grow a lot of Calendula on the farm for our herbal products.
